That's an interesting question, one I too have wondered about. I have a bit less than one-eighth acre at my present house and IMO that's too damned close. Over the years I've experienced all kinds of noise problems (noisy parties, spouses fighting, stereo too loud, dog barking incessantly, power tools). I decided that my next house would be on a much larger property if at all practical.
There are lots of variables. How loud do your neighbors talk? How often? Are the windows open or closed? Or are they having a knock down drag out fight on their lawn?
People have differing sensitivity to noise. Different noises may be more annoying than others. Continued noise is usually worse than intermittent noise, a single noise and then silence is likely preferable.
Here on my one-eighth acre it's possible for neighbors to have facing windows within a dozen feet or even less. That's too damned close!
If an acre property were square it would have sides of about 208 feet, and depending on the size of houses in that neighborhood it's quite possible to have more than 100 feet between houses. In my opinion that would be a vast improvement! Of course it really depends on all those variables, how the properties are laid out, how loud the neighbors are, season (windows open or closed), etc.
So my answer is that for your neighbors conversations to not be heard from your house you are probably getting in the right area beginning at about an acre.
