The New Basics Cookbook by Julee Rosso and Sheila Lukins is far and away the best I've ever used. It's full of useful information and incorporates full flavors using really good ingredients. I wouldn't call it low-fat, but definitely healthy preparations. The New Basics Cookbook - Google Books
I have a lot of success and enjoy many of the recipes I've tried from Cooking Light magazine. They also publish cook books - usually annual round ups of the year's recipes from the magazine. They include nutritional data for each recipe - calories, fat, fiber, etc. There's a range of super easy to more complex recipes and many of the recipes can be adjusted easily to accommodate dietary needs/preferences (meatless, no nuts, and such)
I have all three of these. I got the spiral bound copies after taking a twice a week, month long cooking course. Bobbie Hinman was a guest chef during one of the evenings. The first two volumes are not vegetarian. Despite all the "low-fat" stuff, if you didn't know you would just think these are wonderful cookbooks full of creative and very appealing dishes. As described, they are easy to prepare and don't require a lot of the exotic and rare ingredients found in some books.

My favorite cookbooks are the Farm Journal Cook Books. They seem to use natural ingredients.
If you are looking for healthy recipes, I would suggest the exercise books. They are not cookbooks but many of them have some really healthy recipes.
