I use Pinto, kidney, even great northern once and they are ALL good in chili As you know the flavor comes from the seasoning
I use
Ground Turkey, Beef, or Vegetarian taco mix
Chili Powder (I never have time to cook down the chilis from scratch) 1 Container
Black Pepper
Sage
Cumin
Garlic (Chopped)
pinch of powdered oregano
no salt for me
A red or sweet onion Finely CHopped
2 or 3 chopped jalepeno (Remove seeds if you want your chili mild, leave them in if u want spicy hot)
Place in slow cooker
We always cook chili and beans separate. We mix them in our bowls as we like. They really belong together in the end. We do combine them in containers sometimes for leftovers. I am Texas!
I have an excellent kidney bean curry, and put them in pasta e fagioli. I'll post the recipes later.
As Promised:
Rajma Dal (Curried kidney beans)
2 cans dark kidney beans -drained and rinsed (or 2 cups dry beans cooked)
1 cup water
1/2 -1 tsp cayenne
1 Tbs Turmeric
1 Tbs salt
1/4 cup vegetable oil
1 cup finely chopped onions
3 tbs grated fresh ginger
1 tbs finely chopped garlic
2 Tbs ground coriander
1 tsp ground cumin
1 tsp garam masala
3 ripe tomatoes chopped (or 1 15 oz can of tomatoes drained)
4 tbs chopped cilantro
Heat oil in pan. Add onions, ginger and garlic and cook until onions are translucent. Add all of the spices except the garam masala and cook for about a minute. Add tomatoes and water. Bring to boil, reduce to simmer. Let cook for 5-10 minutes. Add beans, bring back to simmer, then add garam masala. Let cook for another 10 minutes. Add cilantro, stir and serve/
Pasta e Fagioli
1 lb spaghetti
1 28 oz can of tomatoes
1 15 oz can of tomato sauce
2 cups diced onions
4 cloves minced garlic
2 tbs dried basil
2 tsp dried oregano
1 tsp dried thyme
1/4 cup olive oil
1/2 tsp red pepper flakes
1 can kidney beans (or 1 cup dried beans cooked)
Heat oil in pan. Add onions and cook until translucent. Add garlic and cook for another 2-3 minutes. Add spices, beans and tomatoes. Simmer for 20-30 minutes. Taste and adjust salt as desired.
Cook spaghetti al dente. Plate the spaghetti, ladle the sauce over the top. Serve with grated parmesan cheese
