I tried some mustard and it wasn't bad but it did override the taste of the cheese to the point where I didn't taste the cheese, only mustard for the most part. What can be added to cheese to give it some tang or maybe spiceness?

A good cheese, that is, one that you like, is a wondrous delight all by itself.

Cheese needs no improvement but cheese can improve other things. Think of a ham sandwich without cheese and then one with. Think of a grilled bread and butter sandwich, then think of one with cheese in the middle.

Yep, there are many, many different kinds of cheese, with all kinds of different flavor profiles.

And there are many, many kinds of condiments that can enhance the experience of eating cheese, even many different kinds of mustard. One of the traditional accompaniments to a platter of cheese in France is a Dijon Mustard (like Grey Poupon) and tiny little gherkin pickles.

Look for a good cheese selection at local markets and ask for samples!

You know what makes smoked gouda taste better? MORE SMOKED GOUDA.

Seriously, why are you trying to make cheese taste better? Cheese is delicious on its own. (Well, some cheeses; the ones that you like.) Do you not like cheese but feel that you have to eat it for some reason, and want a way to mask the taste?

I like the idea of buying the slightly flavored cheeses like horseradish or jepper, but better than that: make sure the chesse you are buying is high quality real cheese and not cheese products. This makes all the difference in the world. Real cheese is one of the best foods there is, at least flavor wise.
