A baked chicken tonight. Just a light sprinkle of season salt and bake until done and then remove the lid, baste, and let it brown.
This was a home raised chicken and there is simply no comparison to a chicken from the super market. The flavor is better and the texture is better. It's good enough to cook it naked and serve it without any sauce.
I know that sometimes home raised chicken can be purchased at Farmer's Markets. I happened to have raised this one myself, but it is possible for people without the room to raise chickens to get their hands on one.
