Ok folks I was let go of doing Christmas dinner....,..... Yeah, cart wheels yeah! Reminder we celebrate Christmas eve so the big shin dig is on the 24Th. actually no one wanted to do a big Christmas thing and sister's friends would rather do movies.. Dad and mom would rather make it intimate with thier close friends. They are in their 70's and don't want the big fuss!
That means I got what I wanted for Christmas....a romantic dinner with hubby!!!!!! Yeah!
So of course standing rib roast (two ribs) and fancy fixings that I have to figure out are fine....but his Christmas present is his favorite desert.

Please point me to your favorite recipes, the ones that you love... I would love to make this from scratch and impress him.
The easiest version is boxed red velvet cake, the next easiest is chocolate cake mix prepared according to instructions + a whole bottle of red food coloring (yes, a whole bottle). I'm trying to avoid artificial coloring as best as possible so don't often make it, maybe some others have a "from scratch" recipe they can share?
Do you want the from scratch using beet which sounds crazy but is so good or the southern style with buttermilk and tons of food coloring? And did you want the boiled frosting or the cream cheese frosting?
Tips: Don't omit the vinegar in the cake recipes, it's necessary. And for the boiled frosting if using, let the thickened milk mixture cool completely as in cool to the touch not just warm. I put it in the fridge for an hour.

I saved the recipe for the beet colored cake. I always thought red velvet cake was just chocolate cake with red food coloring.....and that didn't interest me in the slightest....reading the recipe with all those pureed beets, interested me big time. I am not a good baker.....but I really want to give it a try....or find someone else to do it for me.

I always have made a beet chocolate cake, it's moist and really delicious and not overly sweet. Then I made the red velvet recipe with it and loved it. One tip, I get the trader joes baby beets in the refrigerated section. (I have been seeing them in grocery stores too now) and just use that. The whole boiling, peeling results in a kitchen that looks like a bloodbath not to mention my hands...lol Much easier to open package and puree. And it's all natural boiled beets.
