Just made this for lunch. I skipped the scallions (didn't have any) and used about a teaspoon of jarred minced garlic vs. a fresh clove. I put about 2 tablespoons of honey in it, too. I also grated the ginger and then squeezed out the juice. I don't like bits of ginger in my food. It kind of chews like wood if a piece gets on the food. That's just my personal preference. Marinated the filets for about 25 minutes. Had with some plain instant rice.

I used frozen salmon filets but I bet it's even better with fresh. I tried baking a few pieces in the toaster oven at 450, but a lot of water came off and it ended up more boiling than baked. I cooked the rest in a little oil in a fry pan on high/medium high and that was a LOT better. Crispy skin for the win!
