Had a great seared duck recipe in port sauce tonight = http://www.alexandracooks.com/2011/1...-in-louisiana/
however i mis calculated the amount of duck breast needed and now have much duck breast left over.I havent a clue what to do with it,any ideas?
My few ideas:
chop and top a toss salad, grind and make meatballs (quite delicious!), slice and make a sandwich, make a taco/quesadillas, or use in pizza, braised duck over egg noodles, pasta salad, stir fry, risotto ...

I'm guessing/hoping that it's not all in the port sauce so: I'd slice it thin and put it in tortillas (crepes are better of course) with some scallions, julienned cucumber, and hoisin sauce. Y'know... Peking duck... like they make at Peking Garden.
The sauce sounds so fabulous that I would just do a rerun of last night's meal. Is the sauce as good as it sounds?
