Looking for a recipe using black rice (pepper, peppers, potato)

I don't mean something to serve with black rice. I mean using black rice as a base for a dish. I've considered things like mixing in salsa and avocado but wanted to broaden the ideas.

Paula Deen just made a rice salad on her show. I had not heard of this, but it’s similar to a potato or macaroni salad.

For the sticky varieties, you can try some SE Asian dessert dishes, such as of Vietnamese xôi with shredded coconut, coconut milk, crushed peanuts. Or Thai style with fresh mangos and coconut milk.
