Cauliflower is great roasted with mustard seeds. Cover with foil because the seeds explode all over the oven.

A lazy method I like is just breaking it into florets and sauteeing it in EVOO with salt, pepper, and cumin until it's browning and becoming tender. Good hot or cold.
