As others have said: seasonings, lots of sautéed or steamed veggies mixed in, some brown rice.

I can't cook dried beans for the life of me, either. They taste OK in chili, but plain - yuck. Much worse than any canned beans. For what it's worth, though, I always thought you have to pre-soak them before cooking. A few days ago, I had no time for that. So no pre-soak, just kept them on the stove longer than usual over a low fire (and had to add water a few times). Much better. They actually taste a little sweet and have a nice texture. Maybe that's a better way to cook beans.

As for canned, I usually put them in a salad. My favorite is three-bean salad: any kind of kidney-type beans, chick peas and green beans, a little salt, a little olive oil, and a little vinegar. The vinegar makes them taste much better to me.

Rice and beans is OK too. That's a very flexible dish. You can add pretty much any veggies and seasonings, as long as the rice and beans are there.

2-3 slices of bacon will flavor an entire pound of pinto beans beautifully.

Of course I've not even began to cook dinner this evening, (it's pretzels or popcorn for me tonight) however (thanks to you all) I know what I'll be making for dinner tomorrow...after I go to the grocery store, of course!

Scratch the pretzels and/or popcorn, I found 2 Tom-Tom Tamales in the freezer. Yipee!
