We have a friend who makes a huge batch of stuffing for Thanksgiving, then freezes it in separate bags. Over the year, she'll pull out a bag and use it for stuffed mushrooms. Surprisingly tasty and very easy.

Jalapeno popper stuffing - chopped up jalapenos, cream cheese and cheddar cheese and garlic powder mixed up and plopped in the mushroom cap. Wrap in bacon.

I've made a very thick and lumpy Sausage Rotel dip and used it for stuffed mushrooms. Messy, but tasty. Can use chorizo.

Buffalo chicken. Crack chicken. Boursin cheese.

Tomato, bacon and cheese. Standard breadcrumb stuffing, but wrap the mushrooms in bacon. Hell, just add bacon to ANYTHING.

I really like this recipe because they're lighter and nuttier and have more texture than most stuffed mushrooms, especially with the lemon juice and walnuts:

1 lb. large mushrooms, stems removed and finely chopped
1 small onion, finely chopped
1/2 cup melted butter
1/2 cup ground walnuts
1 Tbsp. lemon juice
2 Tbsp. pork rinds, crushed well
1/4 cup heavy cream
1/4 cup water


Preheat oven to 350 degrees.

Saute chopped stems and onions in butter for 5 minutes.

Add ground walnuts, lemon juice and pork rinds and stir together.

Place mixture into mushroom caps and press firmly with fingers. Arrange in baking dish and pour 1/4 cup cream diluted with 1/4 cup water around caps in dish.

Bake 25 minutes. Serve immediately.

Made some for my fussy grandchildren to try, used a box of stove top stuffing used stock instead of water , topped them with mozzarella ... they were quite good , wasn’t looking for anything too fancy .

Done that too , used left over stuffing for mushrooms, put out on a fancy China dish , guests are them dainty like they were truffles ....lol it’s all in the presentation ...
