The pork and beef I buy roasts and trim them and cut into cubes. Then I throw a bullion cube in a quart jar and pack the meat in to about 3/4. I put some onion slices and carrot slices on the top and a squeeze of ketchup, put the lids on and pressure can them for 1 1/2 hours. (or you can water bath them for 4 hours...not recommended, but I did it that way for years with no problem)

It really tenderizes the meat (I also do venison this way) and is good on bread, over rice, in stews, etc,
or plain.

A quart jar makes quite a bit. If it is just 2 people you could do pints and it would be fine.

Any cut will do, as it gets so tender. Definitely stock up now if you have the supplies to do this!!

Thanks.

Do you add any water to the jars? I didn't for the chicken that I did but I know some people do.

I will pressure can the meat

No, I don't add any water. The juice from the meat, onions and carrots is plenty!
Pressure canning is the way to go, really!! To hot to have that water bath going for 4 hours, and safer as well.

How did you do your chicken?

Take my rain. My stepdaughter's tomatoes have blight. We need sun here

Cool....I have only canned chicken before. What kind of cuts and how do you can your pork and beef.

Yes...stock up now and can it. The meat prices are going to go up.
Before I even started my marmalade I did wonder to the small farmers market about 10 miles from here: all they have, is exactly what we have pretty much: jalapenos, tomatoes and cukes. I was hoping for some fresh squash, at least...oh well, there will be other years I am sure.

I did make the marmalade: 2 pints and 5 1/2 pints..I just love it and I am not a jam eater. And I did cut back on the sugar a bit.

That sounds like my kind of life.

Some people like knitting, some people like hiking, some people like watching TV. I like to grow and preserve my own food.

yep, I always wonder, how many more years will I be able to continue preserving? So far I am not wearing but at all, but I do notice my leg muscles are a heck of a lot sorer than in years past. My passion, like yours is growing what I can and looking for good deals when I can't grow. Then we do our preserving, whether canning freezing or whatever. When I am not doing that, cooking, eating or playing bridge I sometimes makes the beds. of course that comes after I spend 3 or 4 hours on the computer....

Ew. I have no advice short of hand-picking, because (knocking on every piece of wood I can find) I have never seen one in my garden.

I plant marigolds all over the garden every year. Maybe it's not too late to plant a clump or two?

Go over in gardening check out the veggie threads one started by Younglisa the other by me. Do a search in one of those threads about the nasty things. Nomad and others gave good advice on riddening gardens of them.

Just passing through or I'd go bring the links here sorry girl.
