I have been asked by my New Year's hostess to bring a wheel of brie with a cranberry sauce topping and I have never done that before. Does anyone have an easy cranberry topping other than opening a can of whole berry sauce? Also, if you have made this, what is your preferred cracker? I was thinking a water cracker but if you have something better, I am flexible. Please help as I need it by tomorrow.

I have 3 jars of home-made cranberry sauce that would be delicious with brie! Would you like some?

The canned stuff doesn't really taste of cranberries to me... too sweet, too processed and not very pretty. Better to buy a jar of a gourmet cranberry sauce!

If you feel like making the sauce, it is so easy - and there is a recipe on the package (I buy the Ocean Spray brand) - simply put cranberries, sugar and water in a pan and boil, then simmer for 10 mins.

The recipe and 100's more here.... http://www.oceanspray.com/recipes/recipe.aspx?id=817&nid=11

A simple but delicious variation is to buy a ready made jar of good cranberry jelly, and simmer the contents with a handful or two of dried cranberries.

The recipe on the bag is good. I saw one online which used brown sugar and 1/4 cup brandy with the baked brie.

I'll DM a pretty pictures/recipe. I'd stick it in here but aren't blog links cut?

Gerania, those recipes all look wonderful. And I agree about the recipe on the bag.
Another favorite to put on warmed Brie:
Raspberry Chipotle Sauce
If you don't want to make your own, buy Bronco Bob's.

Make your own -- it's so easy: 12 oz. fresh or frozen cranberries, 3/4C sugar (you can use less, especially if you're using juice instead of water), 1C water (or orange juice or a combination), and 1t nutmeg. Bring to a boil, and let simmer while the cranberries pop. When the sauce begins to thicken -- after about five minutes or so -- remove from the heat and let it cool.

Good luck! And enjoy!
