Sorry you had no heat during that frigid cold spell! I've enjoyed reading all your recipes and have one to share you may like:

Tex-Mex Lasagna
3/4 cup bottled salsa
1 1/2 teaspoons ground cumin
1 (14.5-ounce) can diced tomatoes (I use rotel and drain well)
1 (8-ounce) can tomato sauce
Cooking spray
6 precooked lasagna noodles (such as Barilla or Vigo)
1 cup frozen whole-kernel corn, thawed
1 (15-ounce) can black beans, rinsed and drained
2 cups (8 ounces) preshredded 4-cheese Mexican blend cheese
1/4 cup chopped green onions

Preheat oven to 450°.
Combine first 4 ingredients; spread 2/3 cup sauce in bottom of an 8-inch square baking dish coated with cooking spray. Arrange 2 noodles over sauce; top with 1/2 cup corn and half of beans. Sprinkle with 1/2 cup cheese; top with 2/3 cup sauce. Repeat layers once; top with remaining 2 noodles. Spread remaining sauce over noodles. Sprinkle with remaining 1 cup cheese. Cover and bake at 450° for 30 minutes or until noodles are tender and sauce is bubbly. Let stand 15 minutes. Sprinkle with onions.

Hello again! It's been awhile but I have some new ones for you.... are you ready?

Sweet and Sour Cashew Chicken

(as I made it shown here but amounts are easily adjusted for home cooking)

5 pounds chicken tenders
3 to 4 bottles La Choy Sweet and Sour Sauce
Broccoli
1 can Cashew nuts
2 tablespoons Olive oil

Heat skillet lightly brushed with olive oil and add chicken tenders. Cook until you know they are done, pour on Sweet and Sour sauce, add broccoli and cashew nuts. Cook briefly until broccoli is cooked to doneness you want.. DONE!

(I make this at home and add pineapple bits to it to, scoop up into individual containers and freeze until I was some)

Lets have some stir fried rice with that!

cooked cold rice
chopped onions and celery
left over pork roast or ham diced
1 can Veg All
Soy Sauce
broken bacon bits (optional)

You use the amounts of each that you like for your own tastes. (at home I just use cooked white rice and soy sauce and it is just as good)

************************************************** ***

Apple Salad

3 large apples
2 stalks celery
1/2 cup walnuts
1/2 cup sugar (or splenda)
1/4 teaspoon dry mustard
1 cup water
1 tablespoon cornstarch
1 tablespoon vinegar

Mix cornstarch, dry mustard, vinegar and sugar in a small pot, add water. Cook until thick. Let cool

While that is cooling, chop apples, celery and nuts and place in a bowl. Once the sauce is cool, pour it over the apple mixture and stir covering all the things with a coating of the sauce. Refrigerate until needed.

(for those on a diet, this is so satisfying as a desert, my guys tore this up, even the non dieters!)
************************************************** *****

NOW... For the GOOD stuff and not for those on anykind of diet!

Caramel Chocolate Cake

1 box chocolate cake mix
1 jar caramel ice cream topping
1 can condensed milk
cool whip

Bake the cake in a 9X 13 inch pan according to the directions on the box. When done, poke holes in the cake while still hot and pour on the caramel and condensed milk. Let cool and top with cool whip..

(I didn't have any caramel topping so I boiled a can of condensed milk in a pot of water for a hour on the stove and let it cool. Used that in place of the caramel but wished I'd added a few drops of vanilla so it maybe would have tasted exactly like that caramel sauce. It was caramel like in the taste though)

Warning: You will want 2 pieces of this cake but it is SO rich you will wish you hadn't ate that second piece..
