Now, this was a tasty dinner. I baked a whole spaghetti squash, raked out the "noodles" and made a dish similar to regular spaghetti with some of it. It was nice. I wonder if I could do the same with bean sprouts since the textures are similar.
I also microwave mine. I cut in half first, scrape out the seeds, put in a microwave save baking dish, skin side up with a bit of water in the pan. Cover with plastic wrap and cook for 20 minutes. Scrape out flesh into spaghetti strands into a bowl, add olive oil, onion powder, garlic powder and paprika. I sprinkle grated cheese on top too.
Personally, I would just cut in half, scrape out the seeds, coat with olive oil, salt and pepper and roast it flesh side down until soft. Lubby posted her recipe which uses this method. Anything goes after that. I think cooking with water dilutes the flavor. JMHO.
I saute chopped spinach with a little minced garlic and red pepper flakes in olive oil, then toss with the cooked squash strands and top with parm. So delicious!
Pierce it a few times, place on a paper towel, and microwave for 4-6 minutes until soft. Rest until cool enough to handle. Cut in half and remove seeds. Pull threads of squash with a fork to separate.
