So after hanging from the celibate rope for pretty much all my life, I'm actually wanting to get into a relationship with a woman for once.
However, it seems that where I reside right now and the scene I tend to get involved with (late night party bicycle rides) I'm always running into the late-teen/early-20s crowd.
To me, many of them are somewhat unsure of what they want out of life and aren't particularly set in sticking with one person for awhile.

Since I'm looking into keeping myself firmly planted in the desert/mountain southwest region, are there any cities out there with somewhat higher age number and occupational background?
I've specifically got Denver, Flagstaff, SLC, and Albuquerque in mind.

I can speak for Denver. 30 = 20. 40 = 30. etc... etc...

I moved to Denver from the midwest. I have had a hard time adapting to the Western culture in the sense that I'm way too old for my age group. I have found that most of the people that move here come here with great Colorado adventures (skiing, hiking, moutaineering) in mind and stay in that Peter-Pan mind frame for a long, long while. Much longer than normal. Or I guess much longer than where I am from. Most people in their 30's that want to be settled down already are. The leftovers at this age are more free-spirited... non-commital, spontaneous, etc... there's nothing wrong with any of that... but if you're looking to settle down around here, be forewarned. The majority of people I've met can't even commit to meeting me for coffee on Sunday afternoon.
