I am 6'1" and people are always telling me that I am tall and that's an attractive trait.

Your question is baffling. What does this have to do with shorter guys having attractive dates?

Can your height not be just as appealing as some other quality/qualities that those shorter guys might have?

Height alone is hardly a golden ticket to dating success.

Yes height can be attractive but there has to be a attractive personality along with the height.
If a man is under 6'0 he can also be attractive - again with the personality.

My boyfriend is 6'2. And, yeah, I like it, sure. But I love everything else about him.

If a man is under 6'0" as if this is some handicap? 86% of males in the US are under 6'.

Number seems high, I'm 6' and don't see myself taller than 86% of the guys I'm surrounded by in college. Might be a demographic thing

Also that defensiveness doesn't behoove you
