The ice skating sounds great, if she isn't thrilled about that, just take her to a nice dinner and get her the chocolates or even some cheap flowers fm the grocery store. If you're tight on $$ just go to Red Lobster or some BS place like that in lieu of a nice place. It'll be just fine no matter what you do if she's feeling you, don't sweat it.
I'm kind of in the same boat as you , I've been dating a girl since after NYE and while I'll make sure she doesn't think I don't care, I'll be sure not to overdo things either.
-Been with this girl for about 3 weeks (we've met in person 3 times)
-Has gone very well, great convo and lots of PDA (especially the last time), all that stuff when we meet. We clearly have the chemistry.
-We chat (usually text because of work) every day
-She is a lot of fun to be around and likes to go out at night, bit of the partying type, etc. But she is also into stuff like the bachelor and whatnot, so I am assuming she is the romantic type. Also an athlete (avid tennis player).
-I will be out of town on the 14th because its my dad's bday on the 15th, so this will have to be the 13th.
-In 24, she's 23.
What should I do/get for Valentines Day? I was thinking very simple like a card and then take her out to do something fun like outdoor ice skating or something like that. Let me know if y'all need more info. Thanks!
Last year i met my gf on January 19th and we really hit it off quickly, so i went all out on valentines day.. nice dinner, flowers, note.. you gotta go big or go home at this point.
If you want to keep a girl, act like you want to keep her. This is your chance. You don't have to spend a fortune or do anything crazy. Just think about her and do something that says she's worth the effort. Even if you stay within the expected parameters like buying a box of chocolates and a pretty card, you'll be much better off than being stingy or overly cautious.
Ice skating sounds nice, but that does not give you a free pass to skip the candy.

Men tend to underestimate how important flowers are. Three weeks isn't long enough to justify roses or orchids, so a bouquet of Daffodils, or (if you can afford them) star gazer lilies.
Just let her know that you will be out of town on the 14th so the date on the 13th will be your Valentines date.
Oh... flowers are only for when you are meeting her at her house. Don't give her flowers that she will have to carry around through the entire date.

Ok cool sounds good. One last question, I have no idea if she likes to ice skate, so should I tell her before hand what the plans are or just say maybe a day before that I have plans with you, or something like that? I really like this girl and so I dont wanna eff this up
I'd tell her about going ice skating. She'll want to know how to dress for the date.
