So, on the first date we went for drinks & dinner and late night drinks, and now I'm the one in charge of organizing the second date. Any ideas?
I want to impress him because I guess that the way I handle this organization will say a lot about me. Hence, I really want to find something fun to do late afternoon/night. Movies are definitely out of the picture because I want to be able to talk!

Does your city have a jazz bar? You know, some place romantically lit with smooth jazz by a trio onstage?
How about a really nice art museum? You can talk quietly as you roam the halls of exhibits. Follow that with
up with a bite to eat at some trendy little sandwich or coffee shop (again, a nice quiet atmosphere).

Brisk stroll in the park then hot chocolate at a coffee shop
Staying in and baking cookies or fixing supper together then watching television or a movie at home

It is hard to say what is available to you depending on where you live.

Ok, I know the guys are going to hate it but, who cares ... my second date we went to a clay/pottery workshop (ok so they were popular when the movie Ghost was out, but I digress) where you can choose to make each other something.
That way, if it still goes well, when you come pick up the pieces a week later after they fire it you can make another date to present it to him (give him coffee in that mug, or flowers in that vase, or food on that plate).
I still have that piece of pottery from the date ... I think I'm going to smash it now!
My last really good second date we went to a Jazz club. They had different musicians who would join in at different times during the show. All of them were fabulous. Had a few too many Martini's while we were there. Afterwards went back to my Condo where I had reserved a private cabana in the common area. Lit some candles, had some wine and turned on some music. Gave her a nice warm oil massage. She returned the favor. The rest isn't pg so I'll leave it at that.
A second date where two can talk can vary so much- your interests, the city you live in, the weather...
But I will say this. As a guy a woman would impress me more with her nature than spending money on a nice place. If you trust him, maybe make him a nice steak dinner with a nice chocolate desert. Since you both drink, maybe a nice wine. Some music, maybe dancing, a stroll by some water if applicable... Or maybe if you know some of his interests, look around for an exhibit or something to cater to that.

- Late night drink - Wine by the water (I'd bring my own wine bottle and all) and we could sit there and talk as it's not too freezing. Plus, it's a good spot to make out

I think it sounds nice. But have a Plan B in the event something goes awry.
Indoor picnics can be fun, too, when the weather is cold. However, I don't know how well you know this guy, so you might not be comfortable inviting him over to your house, yet.
What I've done for indoor picnics in the past:
- good music
- nice bottle of 2 of wine
- strawberries, grapes, nice quality water crackers
- cheese plate
- lots of nice pillows and cushions on the floor for sitting, low coffee table, maybe an inexpensive colorful comforter thrown down as a 'rug' to protect the actual floor/make it more comfortable
I think activities are often a good plan for a 2nd or 3rd date - something like a class where you can make something is fun. Sometimes, places like Whole Foods, Williams Sonoma, etc have some fun cooking classes. I had a really fun date once to a knife-skills class.
If you have a nice chocolate store nearby, sometimes they have chocolate making/tasting workshops. That could be a lot of fun!
ehhh don't make such a big deal about impressing a girl. My second date with the girl I'm seeing was lunch because I wanted to get to the casino at night.
Instead of wasting your time trying to impress her, do whatever and just be good company.
For a second date, I think a good idea is some sort of activity. Choose something that you're good at and you can show her the ropes.
I could be wrong, but I don't think she is trying to impress a girl.
