I had this assignment in a class (in college) where I didn't know anyone but it was supposed to be in pairs. A girl asked me if I wanted to pair up and I said no problem. The assignment is done and the class is over.
Yesterday she invited me for coffee this Saturday and I told her I would have to check my schedule. I find it very suspicious because no girl has ever invited me to such a thing. Apart from that, she's incredibly beautiful whereas I'm average. I think she might be wanting to make fun of me or laugh in my face if I accept, like "How did it ever cross your mind I would go out with you?"

Obviously she's setting you up so that she can have a whole bunch of friends ready as soon as you arrive for coffee. They'll be carrying big placards emblazoned with signs reading, "SUCKER!" and will then taunt you unmercifully until you slink away with your tail between your legs.
You need to get out from behind your computer screen and get some grounding in real life situations ...

You didn't need to play hard to get, and by doing so may have totally change something that could have had a good outcome.
Too many regrets, believe me, that's what you'll have, if you don't get out of this mind set.
Just me and it applies to anyone I interact with. I'm going to view them as a good person with good intentions UNTIL they give me a reason to believe otherwise.

Then best you not go. If a simple friendship developed into something more and you actually started dating her, your low self esteem and insecurity would likely erupt in uncontrollable jealousy over every male who dared to even glance at her sideways.
