Why is it considered rude to ask a woman her age, weight, or height?
Is that just an American thing?

I could care less about those things. Now asking me who I voted for in a major election is the height of rudeness to me. I don't know why, but that question has always tucked me off.
Dude, just ask her what year she graduated high school.
^^This. This has always worked for me. I'm not intimidated to ask someone their age though. If I think they don't want to tell it, I'll ask this. Anyone can figure a round about age from that set point.

I suggest that you definitely ask them their age or even go to the length of requiring them to furnish two forms of government ID.
You can never tell nowadays just by looks if these ladies are of legal consenting age. This is the only full-proof way to keep you from a lot of legal/criminal actions down the road.
It is generally considered rude because it is personal information, given on a need-to-know basis. Height, not so much, although it's kind of a dopey thing to ask.
Your name is more personal than your weight.

Personally I have a lot of fun when young looking guys ask me my age too early. It is so hilarious when they thought I was in my 20s and their age and I state I am over 35. They run off in horror.
I still don't understand why you would ever need to ask someone their height or their weight.
