Ok, where in Genesis did you read earth and plants created before the sun.
I find Genesis 1:1 has the heavens ( outer space ) created as first.
To me, the outer-space light of Genesis 1:3 is the light coming from the sun and moon.
Even if we are not to take the bible literally, that seems like a bit of a stretch. I wouldn't try to rationalize it too much. There are many supernatural aspects to the bible. Jesus walks on water, turns water to wine, heals the blind and sick by touching them, etc. Genesis is no different; divine creation of mankind and the universe was supposed to be a supernatural or miraculous event just as it is written.
Since God formed Adam from the dust of the ground, then evolution is Not part of human creation. Even Eve did Not evolve.
This is a limited view. Everything on earth is made of the dust of the stars. So if hominids evolved and God breathed His Spirit seed into one species to make a living soul, He would have been doing so with the dust of the earth. If god selected another branch of hominid of the female variety and did the same thing to her, she would be a rib of Adam ( a branch of hominid). There are many ways to interpret things. The certainty of interpretation in religions is a major stumbling block to spiritual development and maturity.

In Genesis 'heavens' is not outer space. It's the sky above.

Light does not come from the moon. Instead light reflects off of the moon. In fact the moon reflects only between 3% and 12% of the sunlight that hits it. Isn't science knowledge mentally enlightening!
The majority of free oxygen on the planet is produced by photosynthesis. I am absolutely certainly a sharpie such as you already knows this! Got to love those cute little phytoplankton critters! Phytoplankton account for half of all photosynthetic activity on Earth.
In fact, until about 2.7 billion years ago, oxygen was an insignificant part of the Earth's atmosphere. Then photosynthesizing cyanobacteria came along and jump-started the Great Oxidation Event (GOE), and about a billion years later (the 'boring billion', as it's known in scientific circles), oxygen levels rose enough for animal life to flourish on the surface.
We owe a lot to those little critters, no doubt about it.
Evolution has nothing to do with the Sun coming before the Earth. Please learn what Evolution is before making such false claims.
I know full well that they fall under different categories. But for simplicity sake (and to get a few people's panties in a knot) I lumped it into one category.

Genesis 1:11 where it states that God created the plants on the third day. He didn't created the sun until the fourth day.
