I don't like that "cake" term. I'ts more like a pie. The crust is flaky and like a biscuit and the edges are scrimped up like a pie crust. The filler is mozzarella and some pieces of provolone for added flavor. A true Chicago DD also has a sausage pancake (thin) in between the cheese and the sauce, but I left mine out since I didn't have any good raw sausage to use.

ah don't read too much into it . it's just the old ''neapolitan vs. chicago style'' .
neapolitan get's called ''cardboard with sauce'' .

Central Market in Alamo Heights will occasionally sell their own dough in the freezer case on the very back wall. We've had it a few times- definitely proof it and do a quick pre-bake w/ olive oil before adding toppings. It's really good. I've never had ANY success with homemade doughs

I purchased frozen pizza from Sam's Club in San Marcos - 20 pre-oiled balls for $15. I made three pies last night (one cheese, one meatball, one sausage) and think I finally got it right !! Thanks for all the suggestions.

Reviving an old thread. I decided to try and make my own pizza this weekend, just to see how it would turn out.

Does a normal ol HEB sell either frozen pizza dough or fresh pizza dough (maybe in the bakery?)

I think HEB has frozen dough for pizza in the frozen bread section. I've also heard of people using the frozen Rhodes bread dough for pizza crust, but I've never tried it.

Try calling some local pizza joints. Some of them sell their dough. I used to buy it from house of pizza when I lived closer to that area. I don't know if theyre still around.
