Was in HEB today and its a mess. All under construction and the sad part is they moved the milk to the very back wall in the far corner. Its looking more like the grocery section in Walmart. It was so handy having the milk fairly close to the front. Maybe they are going to make a real grocery store and get rid of all the tacky clothes and stuff. A better selection of groceries would be a treat.

They've been remodeling for a few weeks now. I'm surprised that they're staying open through the messiest parts of the remodel, because some of the stuff on the floor seems like a fall hazard.

Having the milk at the back of the store is a pretty common marketing strategy. Stores figure you'll have to walk past more things to get to the milk, and you'll be more likely to make impulse purchases.

One thing it looked like they were adding was a little glassed-in boutique, like the one in the store at 1604 and Bandera. I doubt that a bigger selection of groceries is coming our way, just more junk.

The new HEB at Valley Hi has a bigger selection of groceries in a smaller space, probably because they didn't waste space on clothes and electronics. And the little Walmart at Marbach and Ellison has a bigger selection of groceries than the regular Walmart.

It's because milk is delivered in bulk, typically to the rear of the store where the loading docks are. Less labor is required when the dairy section is in the back. It's also perishable, so the shortest way to the cooler is preferable. It also forces you to walk past the other sections where the retailer hopes you'll impulse-buy an item that is sold at a higher markup than milk.

Product placement is a science designed to get you, the consumer, to spend more. From the interior colors, the scents (some stores have the smell of baked bread pumped into the HVAC) to the flowers and fresh fruits and produced placed at the entrance, it's all titillation for the consumer and hopefully for the retailer, more profits.

The layout of every aisle and the products that sit upon it are based on planograms that have been engineered to the nth degree to confuse, bedazzle and upsell you. For many consumers, they lose the battle once they've walked into the store.
