While I saw it at the last second (and didn't get all the details) driving in to the office this morning, I noticed a sign for La Gloria opening a new location along I-10 across from the Dominion near the site of the new Lexus dealership. I had not heard anything about this and was surprised to see it.

Aldacos and Silo will be opening new restaurants by the CVS out there. I havent heard of La Gloria. I know they are opening a 2nd location at the airport.

That's correct - and Kuhl Yogurt will be opening there too. I have heard that the Silo restaurant will be a seafood concept.
Speaking of La Gloria in the airport as part of the renovation, Las Palapas in Terminal A has now closed...my morning flight routine of breakfast tacos has to be modified now, which doesn't make me very happy!

Depends on the menu: If it's a carbon-copy of its other location, I'd say you might have some suffering issues in splitting the owner's time. If the kitchen is trusted to concoct their own menu at each eatery, there would be little issue, as it's the sous chef and line who are ultimately responsible for what goes out.
Then again, I've met horrible owners with great staff- Ultimately, the owner can sometimes make very little difference in the grand scheme of things.
