also, DH's family is originally from Leeds so I would love to make some of those recipes, add a different cultural element to the dinner table for the kids. I make cottage pie and shepard pie but not much else. I've never had yorkshire pudding.

Nowadays, the same as with other sausages, often artificial casings are used. The proportion of blood, which is usually reconstituted dried blood, to the other fillings is often quite low. The other fillings can vary but should always include good pork fat.

Black pudding is one of the most fantastic accompaniments to seafood, especially scallops or shrimp.

No, not a haggis fan.

Black pudding is a wonderful recipe ingredient as evidenced by all of the chefs who use it. Of course blood sausages are not unique to the UK with variants all round the world except maybe the US?

I don't think there is a credible recommendation.

Also it's difficult, if not impossible, to find a good Chinese or Indian restaurant. I guess there is a list of ethnic cuisine which is missing from Florida but it's a small state and there is no shortage of eating opportunities.

You can produce good grilled food and BBQs with a cook but you need a Chef for fine cuisine and I would think there may be a shortage of these in Florida.
