If cost is of no concern whatsoever, Canlis is often thought of as being the premier Seattle fine dining restaurant (or at least one of them).

Sushi Kashiba at Pike Place Market. It is truly sublime. The aging sushi master/owner is named Shiro and apprenticed in Tokyo when younger with Jiro (of "Jiro Dreams of Sushi" fame). Sit at the sushi bar and watch the master at work.

Herbfarm: local focused amazing prix-fixe located in Woodinville. Exceptional.

Any one of a number of inspired Asian places. One of my favorite is the provincial Vietnamese Green Leaf, the ambiance of the Belltown location is fantastic.

I have hundreds of more suggestions but will pass the mic.

Yes, that's true, but look up the menu online, some of it is not for everyone. I like Palisade, the views and the seafood are very much Northwest.

Completely agree with you about Palisade, sockeye. I made the other suggestions because when someone describes themself as a "foodie", it usually means something different. I know, I'm married to one.

Although "foodies" often are painted as elitist or snobby, my "foodie" is truly passionately interested in organic ingredients and local sourcing. She loves nuanced flavors, the dance of food preparation, the aesthetics of food and the possibility for chef interaction. If these things exist, she would happily experience a $150 prix fixe or a $8 South Indian hole in the wall. She isn't out to impress anyone, she just knows what she likes and makes her happy.

Palisade is fine but it's for the non-foodie who wants "typical" Seattle seafood and a nice view.

Gladhands, Seattle has quite the reputation among chefs around the country as a very good (and getting better daily) "farm to table" restaurant town. Thierry Rautureau, known as the Chef in the Hat, is the chef owner of Loulay Kitchen & Bar and Luc restaurants in Seattle. My wife and I frequented his excellent prix fixe restaurant Rovers in Madison Valley for years. He is classically trained and I believe won the James Beard culinary award multiple years. I'll never forget something he told us once at dinner. He said "I have been involved in fine dining all over the world. I have wild mushroom foragers, fisherman, farmers bring things to my door all the time. We truly do have some of the best ingredients locally available in the world in this region".
