Downtown Greenville- I'm not a fan of cities, but it is beautiful. Stay after dark and walk down to the Falls.
Table Rock State Park- Take a hike, rent a log cabin (built in the 1930's by the CCC)
Clemson University
Drive along Rte 11 (mountains)
BMW Museum- They've also got plant tours (closed when we were there)
Bear in mind, I've only been to the Upstate 3 times!

Unfortunately no, we just sort of passed through Spartanburg. Actually, my fiancee's dad wanted to try Beacon because of their reputation for sweet tea.

We did get to eat at Zaxby's though, which I thought was very good. I know it's a fast food place, but coming from the Midwest, I had never even heard of it. I'll definitely be going back.

President Andrew Jackson's birthplace is in Lancaster. There is a State Park named after him. Although it is debated all the time whether he was born in SC or NC since it is right on the border.
