I have a friend who is going to arrive in St. George, Utah around July of this year. He is a Chinese national from Sichuan province and will be teaching the Chinese language at one high school and one intermediate school.

I am aware that the restaurants normally cater to American tastes, but it is possible they may have Chinese Americans and/or Chinese (PRC or Taiwan) nationals who work there and/or own the restaurants. Is it possible for him to ask for authentic Chinese (in particular, Sichuanese) food on request, and/or do these restaurants have "secret menus" for ethnic Chinese customers?

I have looked for e-mail contact details but had difficulty finding them. Is it possible for me and/or him to e-mail the restaurant owners and ask for further info?

Unless the cook is a *real* Chinese cook, you may be able to get the *real* stuff.

Sadly I have seen other than Chinese cooks in the kitchen ...

Again, if the cook is a *real* Chinese cook, I have often been able to get some real stuff.
