Any good places for biking only (paved paths) or for the most part level dirt\gravel trails? We don't mind a little challenge but we don't want to be having large inclines/declines etc.

There are bike trails literally everywhere....long bike trail near Snow Canyon, all paved. Just stop by a bike shop and ask.

The Mayor’s loop down by the Dixie Convention Center. When I used to go to conventions there, I’d pack my bike and ride it and some of the trails off it in the evenings.

i 2nd snow canyon. Have stayed at the base of the canyon a few times and love the biking
in that area. At sunrise in the late fall its beautiful and cold !!

I visited St George a couple of years ago when I was looking around for places to live after retirement. I got a copy of the bike route map listed above and pedaled my way all around the area. I liked the scenery and saw lots of other bike riding people around town. I was there in late April, and temperatures were near perfect. I suggest riding before Noon to avoid the stronger winds that sometime kick up in the afternoon.

The terrain in and around St George is not flat, it is loaded with rolling hills and also some climbs that will give you a workout. I loved the Snow Canyon loop. In most other states, it would be considered worthy of being a National Park, but I guess in Utah it is just another beautiful canyon with incredible rocks and mountains.

If you are ever in Tucson, it offers more of the kind of bike riding you (OP) are looking for. A huge network of paved bike trails and bike lanes in mostly gentle terrain that don't require tough uphill climbs.

Over in bloomington the bearclaw poppy trail is nice, it has both the easy downhill section by the fence and the harder section that goes next to the mountain there. If you are feeling adventurous at the end of the easy trail it goes into another trail or just finish the loop which is really a downhill going back to the parking lot.
