Tablets are more mobile, can "turn off" and "turn on" instantly, and are generally less hassle with longer battery life and less bulk.
Laptops can do anything a tablet can do and FAR more. Tablets are not replacements for computers. If you want to browse the internet and play games and whatever, get a tablet. If you want to work on spreadsheets or create PDF files or really anything even close to productive, you'll need a laptop.
iPad can: fit into my purse, not need to be brought out for TSA screening, run iPad apps, easily sync to my Mac for a "backup", serve as a (somewhat lame) point-and-shoot camera, last longer on a single battery charge (this may no longer be true, and it also depends what you're doing)
Laptop can: display Flash websites, allow me to develop and install apps without buying a 'developer license', run <insert OS name here> apps
Tablets come in many forms. Many of which are just as capable or even more capable than laptops. There's too many different kinds of both tablets and laptops to make any general statement about them.
The iPad, however, has many of the limiting qualities mentioned above. But that doesn't apply to all tablets.

Are you including Windows 7 "tablets" in the tablet category? I consider those laptops with a flip around touch screen and niche products. I guarantee 99% of people don't think of those when they hear the word tablet.

Yes, all tablets, including tablet PCs (XP onwards) are considered tablet. Most people probably think of slate tablets. This is a shame, since tablet PCs are so versatile.
