If the kids are super into Disney, they have a beach resort in Vero Beach. Very nice area on the island. Light traffic, plenty of parking.

When I lived in Orlando, our beach outings were typically day trips to/from the Pinellas County coast (Clearwater, Treasure Island, etc.) It’s a drive, but it’s worth it, particularly for the reasons you mention. Leave early enough, park your car, and spend a day out in the sun, with everything you can think of in a busy, touristy beach town all within walking distance. You can also take the trolley up and down the coast, and see all sorts of nice things, including but not limited to practically guaranteed dolphin sightings. Well worth it in my opinion.

Clearwater Beach is exactly what you've heard it is: A gorgeous beach with fun activities for families and all ages. It's much nicer than Cocoa beach...but, if you're only staying one night, it might not be worth the trek. If you can stay a couple nights, then I'd go. Otherwise head to Cocoa.
