If you're looking for speed, take 90 east across Idaho, into Montana, and then go south on a highway I can't remember, back through Idaho, Utah, and into Vegas.
If you're looking for safety and boredom, take 5 down to Portland, then take 20/26 into Bend and 97 south through Oregon and Nevada. One of the dullest drives ever, but the weather will typically cooperate.
If you're after scenery, south into Cali, take the coastal 101 into LA and then make the 4 hour trek back northeast into Vegas.
Not bad, go I=15 when you get to Idaho, that is the best route, stay out of Nevada. That road from Reno to Vegas is the morst boring road in the world. You can do the drive in two days, even in winter, with good weather.
Keep in mind, there's supposed to be a lot of snow coming this winter. It might ultimately be more faster and convenient if you take i5. My route generally is going on 95, then 84, 82 then i90. There's a lot of snow on those routes (during winter and early spring) and possible road closures. i5 will almost always guaranteed to be opened and plowed.
You may want to consider taking the I-5 all the way to Bakersfield, CA. Take CA 58 which will connect you to the I-15 northbound. I've driven this route a few times and it's probably the most predictable at that time of year.
Depending on the weather, travelling east through Washington, Oregon and then south, once you hit Twin Falls, ID could save you some time over the other route, but not if weather delays your journey. Plus, you will find yourself on some rather desolate roads. The scenery could be pretty good, though.
