To continue with the Korean theme I made Kim Bop. It was very easy to make some for my family with imitation crab and others without for myself.

Tonight we're having vegan pizza with zucchini, veggie bacon, mushrooms, red bell pepper, onions and follow your heart monterey jack cheese. We meant to get Mozzarella but we got MJ instead, I'm sure it will be good. Last night we made Tofu Stroganoff with plenty of mushrooms, dill, and sour cream......deeeeelicious!

I came home from work and found out my wife made the same dinner - just with seasoned homemade seitan instead of Morningstar crumbles and black beans instead of refried. Aaaah!

Sounds great! It's a fantastic, quick dinner. Good source of protein too. The Amy's refried black beans are really good, I've been hooked on them for a long time.

Red Curry with Sauteed and Fried Tofu tonight with veggie potstickers to start.

Tonight my wife made roast seitan (using the recipe from Veganomicon) and potatoes in a mushroom and onion gravy. Since she went veg herself, her cooking keeps getting better!

Total cost was around $6 (including leftovers for tomorrow) and it tasted great!
