Last night I roasted some new potatoes and had that with brussels sprouts and a BL (no T) using multigrain bread, Lightlife bacon, lettuce, and vegan mayo.

No clue about tonight.

The grilled spicy cauliflower was super good, will finish off tonight, with veggie riblets and baby bok choy.

Red coconut curry (thai style) soup, with glass noodles and sweet potato (Okinawan), bok choi (bought from Costco, apparently a bottomless container...., the last of the supergreens mix (kale, chards, spinach) and whatever veggies I find in fridge, with cilantro.

I WILL be a good wife this week, and take hubby dinner because he working late two nights.

I made lazy Asian noodles - whole wheat spaghetti with bottled no-oil stir fry sauce on it. It was actually really good! For appetizer, some no-oil homemade hummus and a few Wasa whole grain crackers. Had lots of veggies in breakfast and lunch, so didn't sweat the veggies for my lazy dinner :-)

I ate raw vegan all day today (with the exception of coffee early this morning) only because I have developed a painful sore throat along with upper back strain/neck pain from lifting a 47 lb canoe the wrong way. I spent three hours in the ER being xrayed and waiting thinking I have something stuck deep down in my throat because it feels like a sharp stabbing pain that moves near my right collarbone/deep down in throat and every swallow is agony. But they couldn't find anything, so tomorrow it's off to see a specialist and a possible endoscopy. So now it's soups, smoothies, puddings, soft food in tiny sips. :/

I made a pizza using whole wheat lavash bread from Trader Joe's as the crust, 2 types of onions and mushrooms, and SoDelicious brand "cheese". It turned out really good!

Tonight black-eyed peas soup/daal with cilantro chapatis served with onion,cucumber,red radish and tomato slices,mango/lime pickles and lassi to drink. Maybe red or green grapes for dessert.

I am off the veggie train, as I have to cut carbs drastically due to pre-diabetes. I have to add more protein, and find out what is triggering the sugar spikes (the beans, etc).

While I feel great, and I think it has done wonders for my RA, it is not quite the right mix of foods for me, and I know it could be done within a vegetarian diet, I wouldn't enjoy it much.

And I love my food!!
