Yum! And I'll second the sentiment -- Happy (unturkey) Thanksgiving to all!

Hope everyone had a great Thanksgiving. We had nice plates full of homemade pasta, mushrooms, eggplant, peppers, plus some spinach on the side. Yesterday was a great fava chickory bean soup with steamed kohlrabi (looks like broccoli), grilled potatoes, and antipasti of eggplsnt, peppers, and zucchini. Aaah!

Do you buy this from someone else, or make it yourself? Had the best handmade penne rigate the other night...maybe I'l look into getting one of those pasta machines. It was so good ~

BTW, I was looking into the history of olive oil. The first known olive oil tree (the fossilized version!) was found in the town you live in. I thought that was pretty cool. It was dated around 6,000+ years old - way back when the dinosaurs roamed the earth

We had it a a restaurant in Alberobello, Italy called Il Pinaccholo which had, like most Italian restaurants, lots of great vegetarian and vegan options.

Olive oil, such a gift...we must go through between 1/2 and a full liter per month.

Thanks everyone for the Thanksgiving best wishes!
Over now but I still have leftovers, yumm! But it doesn't compare to you others on here. My mom came to visit, so it was cool and peaceful! And, I was thankful for that.
Maybe for Christmas I'll try some new vegan recipes out!!!
