I second the tofurky slices. I am not fan of the whole tofurky, but I do like the tofurky slices with a little vegenaise, lettuce and tomato. I also love hummus, avocado, red onion slices and lettuce. Using a good bread makes all the difference too!

I make BLT's with Bacos. Use the chips not the smaller bits. ^^ You can also make a BLT with Morningstar Farms "bacon" slices, which are pretty decent. ^^

Hey just a little side note if you don't mind to list the type of Vegan bread that you use on your sandwiches.

I use the bread and wraps from Food for Life. If you have a Trader Joe's nearby, most offer several varieties at good prices.

Default I rarely use "store-bought" bread...

I bake my own for the most part, especially hearty rustic loaves. I usally make a rye or whole wheat basic loaf...sometimes adding toasted sesame seeds to the interior of the loaves. I get much better quality when I do it myself...my loaves unless seeded only contain organic flours, water, salt, yeast, and vital wheat gluten.

Ooh, that homemade bread sounds good! Wish I made the time to cook more...

every time I have ever "tried" to make bread... it is a lead weight! I could hurt someone with it!
hehehe.

Just got some good sandwich bread today and avocado! yummy.

OH, and I see you are in AZ. Bet you can find nice avocados easy enough. Here in NC it can be challenging. But, when you find good ones, it's all worth the search.
