yeah, Love avocados!!!

But they are costly... about $1.20 for one...
hate it when I let one go "bad"

I see it as avocados as a base for fats for us veggies, especially if not eating cheese, it is the substance of the sandwich, i think!

Default Here are some more ...

1. Make some honey-mustard grilled (actually broiled) eggplant, thin slices, and serve it between two nice pieces of garlic toast. It is delicious warm and not bad at all when at room temperature.

2. Tahini in a pita pocket with grilled onions, eggplant, tomatoes, etc.

3. Commercial or homemade olive tapenade on good bread (ciabatta, pita, etc.)

That's when you put it in the blender with a serrano, lime juice, salt, and some water to desired thickness and pulverize.

Voila, instant green taco sauce. Would be good drizzled over a black bean quesadilla.

$1.20 is a bargain. I paid $1.99 for one today.

I took your idea of using it for the 'fat' and another posters idea of a BLT without the bacon. I subbed the avocado for the bacon, chopped up a fresh tomato, added some lettuce, and wrapped it up. Good stuff!
