Did anyone else catch this article:

I felt very inspired.

Only a few of the suggestions contain "meat".

I could imagine doing a very fun summer party based on some of these recipes.

Although I always tend to associate sushi with raw fish, one of my students last year reminded me (several times ), that vegetarian sushi can be delicious.

making vegetable sushi at home is really fun!

isa moskowitz & terry romero, who did the vegan with a vengeance and veganomicon cookbooks, started out doing a public access cooking show in brooklyn, and they make sushi on their first episode:

The PPK: All we believe in is Punk Rock and Tofu

i found that watching someone else do it is a good way to learn rolling techniques (although i learned from a friend in person rather than watching a video!)

there are also recipes for different kinds of veggie sushi in their cookbooks. it's really fun to experiment with different combinations.

We've made really great vegetarian sushi from combos of apples, cream cheese, avocado, raw zucchini, and baked sweet potatoes. Yum!

I just had veg sushi at Whole Foods, with avocado, cucumber and brown rice. I really love it at a local restaurant, with sweet potato, delicious!!!

You can use long overlayed cucumber slices as the roll if you can't find nori. Then matchstick carrots, some cucumber avocado as the base to gold it all in, sprouts, spinach....good stuff

Whenever I think of sushi I think of fish (raw tuna, yum!!) but I have to agree these are great alternatives to fish. Well posted, plaidmom!

My favorite sushi place has an awesome veggie roll. It has spinach, carrots, avocados and tempura asparagus. Add some wasabi and soy...yum!

Oh sweet potato and goat cheese rolls are good too. I eat those plain.
