I'm wondering if anyone has knowledge regarding what type of market is in Wheeling for good chefs. I'd also like to hear about any experiences one may have had with any local restaurants working in the back of the house or if any restaurants are recommended to work for.
The reason being for this is that I'm looking at the possibility of relocating to the Wheeling area. In this process, I'm looking to bring my girlfriend with me. She currently is a chef with about three years experience as soux chef and about two as executive chef in an fine-dining, family run Italian restaurant. Ideally she'd like to move on to more of a French cuisine and learn more so if you would know of any good French-style restaurants in the area that would be greatly appreciated.
I know that how much the back of the house pays in restaurants varies greatly from region, business, and supply of skilled labor. Any insight on your experience either working or dining in these establishments is greatly appreciated. Info on pay rate etc, experience, business culture, etc...
The trick is finding an employer who will share...
Best Idea is to open your own catering business.
Second is teaching in a college and working on the side. (Salary and benefit package)
Wv does not pay for this indulgence...but it's coming.
Case in Point:
A local university just finished a 250 million dollar expansion. Wanted a catering facility for just the local 'on campus events.
Well, everyone wanted to use the new facility because of its newness.
Hoped to do only 30/35 events this summer...demand was 105 events.
Quality and demand has employed 5 chefs who teach and work the kitchens for the expanded catering business they never expected.
Local private catering vendors had a grasp on the industry and were providing average food for a high cost.
Now the situation is reversed, high quality food for a low cost...and a stampeed is in the works to use the new facilities...
Will carry on for many years as a good reputation is everything in the food business.
This is a good sideline business moneymaker and I expect other colleges to begin catering to the public too. (hoping that the food being prepared is not donated or free government commodities)
I would venture to guess that the casino (Wheeling Downs) or Oglebay resort would be the best bet for a high end chef. I really can't think of anything else around there with the demand.. I have some friends in Wheeling and I'll ask..
In Wheeling itself, Oglebay, Wheeling Downs and possibly Stratford Springs would be about it. There is also a casino in Washington, PA which is about a 20 minute drive to the East... The Meadowlands.
