I am moving from AR to WA on Tuesday and will be taking I-80 across all of Nebraska & Wyoming. I have heard that the stops are quite far apart in WY and I am concerned about planning gas stops. Is there ample opportunity to gas up across I-80 in WY? I think I will be averaging 6-8 mpg with a 35 gallon tank (16' truck w/double axle car hauler)

No problem. There is a place to stop about every 100 miles at the most.

We can have strong wind any time of the year. Just give yourself plenty of time so you can slow down if you need to and you should be fine.

This is common sense but there are many that don't know how to pack a truck. Keep your heaviest items closest to the cab and low in the truck. If there are strong winds it will make it easier to handle.
There aren't any snow storms on the forecast for that time so you lucked out there!
