Among the chef’s specials are chicken florentine, a boneless chicken breast stuffed with spinach and prosciutto rolled and covered with a spicy Alfredo sauce and served over a bed of pasta; and mesquite-­smoked peppered prime rib, 12 ounces of trimmed prime rib coated with crushed black peppercorns and accompanied by sautéed wild mushrooms. The Vineyards offers a variety of wines, including its Vineyards Signature Cuvee produced by Becker Vineyards in nearby Fredericksburg, using the very grapes you see on the premises.
