  • Critical: Observed food that was not properly protected from contamination by separation, packaging, and segregation. Observed eggs stored above ready-to eat food products and pre-cooked hotdogs in the walk-in-cooler and continental refrigerator.
    To prevent contamination, food shall be protected from cross contamination by separating raw animal foods during storage, preparation, holding, and display from cooked ready-to-eat food as described in this rule. Store eggs and other raw animal products below and away from ready-to-eat food products.
  • Non-food contact surfaces of equipment are dirty. Observed buildup on the interior of the ice machine and within the gaskets of the prep cooler.
    Nonfood-contact surfaces of equipment shall be kept clean. [Clean and sanitize the interior of the ice machine and prep cooler gaskets to prevent possible contamination.]
