    Clean floors in dry storage area of buildup of debris and floor cleaning liquid. // Clean dusty racks hanging from ceiling in prep area.

    GC: Items are stored on the floor in walk in freezer. Store all items off floor at least 12 inches.

    Replace missing air temperature thermometers in front serving area low refrigerators.

    Sliced cheese and cut tomatoes on ice bath were 59F and 50F. Maintain cold potentially hazardous foods at 45F or less. When using an ice bath, use ice AND water filled to the highest level of the food, in a container large enough to allow ice bath to touch all outer sides of food container.

    Walk in freezer condenser is building up ice. Have this serviced by a repair technician. // One shelf in walk in refrigerator has peeling coating and need to be replaced. Evaluate all racks for cleanability and replace as needed. // Dry storage rack is propped up by wet, folded piece of cardboard. Repair rack as necessary.

    Be sure to allow pans and trays to air dry before stacking. Several pans and trays were stacked wet today

    General Comment. Be sure to thoroughly clean the basins of the utensil sink between uses.

    General Comment. There is some debris on the dumpster pad.

    The cooler closest to the drive thru has condensation in the bottom of the cooler. The cooler at the drive thru and near the pass through have split gaskets. The built in thermometer on the work top cooler in front of the fryers is full of water. The drain for the utensil sink is leaking.

    General Comment. The floor beneath the utensil sink right around the floor drain needs cleaning.
  • Source in accordance with 15A NCAC 18A .1700; hot & cold water available; under pressure
    General Comment. The hot water got up to 129F, recommend checking it again later to be sure it goes over 130F.

    There were several split gaskets on several coolers through out the facility. There were some replacement gaskets at the facility, be sure to replace the gaskets when they are split.

    General Comment. Need to store the chemicals either in the cleaning closet near the restroom or the outbuilding. Do not recommend storing chemical in the water heater room.

    General Comment. Observed one employee handling food without a hair restraint at the beginning of the inspection. Be sure employees wear hair restraints (ball cap, wrap around visor, or hairnet) when handling food.

    Need to clean the shelving in the walk-in cooler, the inside of the glass front pass through cooler, and the legs and wheels on equipment.

    Need to clean handles of equipment more often. There was buildup on some of them.
  • Food contact surfaces cleaned & sanitized; approved methods and sanitizers
    Overall food contact surface cleaning and sanitizing was good, but there were a couple of pans with dented corners that had some food debris on them. Once pans are badly dented and have become difficult to clean, they need to be replaced.

    Several coolers have split door gaskets. The door gaskets on the sliding door cooler are split. The legs on the utensil sink are getting some rust on them, recommend cleaning them to see if rust comes off.

  • No cross-connections
    General Comment. Need to install a back flow prevention device between the shut off valve and the hose in the can wash. If the hose is going to be open ended an inline vacuum breaker will work. If a spray nozzle will be put on, need to install a pressure rated back flow prevention device (watts #7 for example).
  • Food protected during storage, handling, display, service & transportation; written notice for clean plates
    General Comment. Need to install a splash guard at the prep sink if lemons are going to be stored next to it. The rack the lemons are on needs to had the side bar raised to 12 inches above the floor or the rack needs to be put on wheels.
  • Non-food contact surfaces clean
    Need to improve general equipment cleaning. Examples include: the shelving over the bun toaster, the shelving in the walk-in cooler, handles of equipment, and detail cleaning on warming cabinets and cooking equipment (stove/oven).
  • Food & non-food contact surfaces easily cleanable & in good repair
    There is some foam caulking on the inside of the freezer door that needs to be cleaned. The plastic soda nozzles were deteriorating, they were replaced. Several coolers including the walk in cooler door have split gaskets (they have been ordered).
