This option is available in your profile. Click My Settings and there is a list of the forums you have subscribed to. Next to each one there is also the option to unsubscribe.

What I want to know is how to unsubscribe from a particular thread within a forum, i.e. I don't want to see every single thread when I ask to see new messages in subscribed forums, just the new messages in threads of interest to me. Can I do this? Thanks

go to subscribed threads on the right check what threads you do not want and then scroll to the bottom and in the drop menu you will see delete
Also in case your not aware you can make folders in subsribed threads to organize
for example
Moving
types of plants for NC etc
after you make the folders you would like when you subscribe to a new one you can choose where to put it.
