Ghana is called "Africa for beginners" because it is reasonably safe and has a good mix of native culture, animal adventures, beaches and medium sized cities.
It is also the only African country that I have visited so I don't have any comparisons.
Research it and checkout expat groups as well as facebook family travel groups.
There are many parents who have taken toddlers to East Africa and to tourist spots in North Africa like Morocco. South Africa is said to be the most "Western" but some people are turned off by reports of
crime.
There are many options. Do your research and you will find something that works well for you. Read about Botswana, Tunisia, Ghana, South Africa, Madagascar, Morocco, Tanzania, Kenya and Namibia.
