I noticed most restaurants no longer use vermouth either.

Agreed. I put the vermouth in the martini glass, roll it around to coat then toss it out. Shake the crap out of the gin/and or vodka for a Vodka Martini, then add it to the glass.

That is a very dry vodka martini;a straight martini uses Gin and vermouthy to your liking;then of course a large martini olive.
