You'd need to look outside the city limits in order to have the larger livestock.
Travis County, Williamson County.

Land in the Pflugerville area, outside the city limits has mostly all been bought up by developers.
You might find a resale here and there with 5-10 acres east of 130 between Pflugerville and Hutto.

If you want to buy land and build, then Taylor might be a good area to look in..especially around the CR112 area off the 79 loop. You'd have 95 to bring you north and south, 79 to go east and west and then 130 off of 79 to bring you north and south into Austin.

The further away from Austin you go, the cheaper the land. I think Travis county requires minimum of 10 acres for Ag Exempt and it takes a number of years to get it (I'm thinking 5 years) if it's not already on the land you buy. Not sure the min. acreage for Williamson County.

Georgetown, Granger, Taylor area (Williamson county) has land going for $6,000-$8000 per acre give or take.

A local semi-custom builder is Tilson Homes. They built my home in 1999 on my land. I was able to modify their plans to suit my needs.

Good luck in your search.
