Do you have any particular reason for choosing those model years? If you're trying to stay under a certain price point why don't you list your maximum?
2014 and newer Subaru foresters have lots of headroom as does the Ford Flex (espically with no moonroof) ... but at 6'3" you're not all that tall unless you have a very long torso and sit up extremely straight. I'm 6 3 and fit in almost every car including Porsche, Ferrari, Miata, Civic, Prius ... I do think Mercedes SLs are actually rather cramped
I don't have a long torso and I prefer to sit laid back when I drive. I chose those particular model years because I am trying to stay between $10-12k. I currently drive a 2000 corolla
You might try a Toyota Avalon. I am too tall for one, but someone 6'3" could probably fit. Buick Lucerne will work for a tall person. I don't fit in a Ford Taurus, but you might try one. The other option is to unbolt the seat and redrill it our use hardware to set it back. I have done this many times and it generally works out very well. If you fit in a Corollo, there are probably lots of choices for you.
I'm 6'7 and have surprisingly found small sporty hatchbacks fit me best. They've got a high roofline and an emphasis on driver comfort to the point that you can slide the seat nearly all the way back against the rear seats and the seating is low where legs are more outstretched. Very uncomfortable on long drives in my wife's RAV4 where my knee is pinned against the center console and that's the case for many SUVs that have you sitting more upright.
Had a 2010 GTI that I loved and it fit me like a glove. Driving a 2015 Kia Forte5 SX now which I don't even need to have the seat all the way back. The Mini works too, but would not call that reliable.
Others that have worked, Hyundai Veloster, Subaru Legacy, WRX, Mazda3/Focus are a bit cramped but work.
Truth about GM cars is that you really can slide the seat far far back. True. That does not change low head room, low shoulder room and low knee room. When you go for long haul, no one sits with legs straight forward and close together. You legs relax and fall off to the sides. There you hit door handle and center console.
GM SUV and trucks do not slide back too far and actually have rather odd, chair like sitting position. And chair like comfort.
Problem with passenger cars, as in sedans, is low sitting. Tall folk is prone to having bad knees and a bit elevated seating benefits them greatly. Dropping down into same Impala is ok, getting up and out os different story.
I'm 6'4" and used to drive a 2001 Miata that I considered snug, but quite comfortable. Compared to this, the GTI that I drive now feels enormous, even with a sunroof.
Modern cars are very carefully designed to comfortably fit about 99% of the population.
